Iberian ham

PDFPrintE-mail

It comes from the Iberian pig, ancient breed native to the Iberian peninsula, the last survivor of the grazing pig race in Europe.
Its most salient identification features are slim silhouette, thin legs and long, pointed snout and, in general, dark skin and feet, from where the popular term "pata negra" traditionally used to designate the hams from the Iberian pig.
